Lovely Shrimp Croquettes ( Japanese shrimp koroke)

First japanese food that I have learned from my dad in law. My husband and I love to eat koroke (croquette), so..one day when we were in Atlanta,to visit my husband's parents and family..my dad in law called me and told me to come to the kitchen with him to make some japanese dishes. And one of them was croquette. He taught me how to make ground beef croquette.
Then..day by day I started to learn the other japanese dishes from my dad in law. He was my first teacher actually who taught me some Japanese foods. I remember too, when we just have first baby, my dad and mom in law came to visit us to Japan from US, and during their visit days, he was the one who cooked breakfast,lunch and dinner for us. I was soo embarassed , because i tought they were guests in our house,so ,I'm suppoused to serve them. But he told me,in Japan there's a culture that sometimes, parents or in law stay with their children who just have a new born baby to help them at least for a week such as cooking or cleaning the house. Hmm..I'm  so glad I have them as my In law.
Okay,..so here's the recipe fro shrimp croquette, you change the shrimp with ground beef or chicken as you like to have them in your croquette.Enjoy!!

***SHRIMP CROQUETTES***

Inggredients:
:: boiled potatoes
:: boied eggs
:: fresh shrimp (chopped or blended)
:: cream cheese
:: chopped onion
:: salt and pepper to taste
:: frying oil
:: butter

For the batter:
:: panko or bread crumbs
:: all purpose flour
:: beaten eggs

How to make :
1. Smash the boiled potatoes, saute chopped onion with butter,when it turns to light brown,put the ground shrimp,stir well until become tender and the color has change.
2. Put the boiled eggs which already chopped, sautted shrimp and onion,and mix them as well,put some salt and pepper to taste then put some cream cheese and mix it again
3. Make the shape of croquettes as like as you wish
4. Firstly after all are finished to be shapes, put one by one in to the flour,then beaten eggs and bread crumbs. Do it step by step.
5. Fry the croquettes in to hot fry oil until the color has turn to golden brown
6. Serve with barbeque sauce or ketchup or mayyonaise,and garnish with thinly sliced cabbage and cherry tomatoes

Agedashi Tofu

Everyone in my little family loved TOFU!!this time, I made them as fried tofu in sauce. You just need ;
* Tofu
* corn flour
* grated radish
* grated ginger
* sliced thin string onion
* a pinch of red chilly powder
::::: Cut the tofu as like as you want, wipe them with kitchen towel to reduce the water. And then,.. put it in the bowl of corn flour, and fry in the high level of fire til it become golden brown :::::

how to make sauce :

* water
* brown / white sugar
* soy sauce
* granulated dashi (fish stock)
::::: Mix all the inggredients together and cook in the low heat, stir gently until it become boil, pour in to the bowl and let it cool or you can keep it in the fridge :::::

Ebi Furai aka Udang Goreng Tepung Roti


Hmm membuatnya..gampang sekali, untuk membuat ebi furai ini, menggunakan tepung roti jenis putih. Biasa disebut panko dijepang. Bisa dimakan dengan  saus tomat,saus sambal atau bbq sauce. Tapi kali ini , saya membuatnya dengan sauce tartar. Sauce tartarnya bisa dibuat sendiri loh, bahan untuk saus tartar yaitu ; telur rebus, cucumber pickles, onion, garam, parseley, mayonese, air jeruk nipis.
 Sedangkan bahan untuk ebi furai yaitu ; udang besar, tp terigu,telur, panko dan minyak goreng untuk menggoreng. Gampang kan?^-^

Gyudon Halalan Toyyiban ^-^

Banyak teman" saya yang ingin sekali merasakan makanan jepang. Tapi ada juga yg ragu akan kehalalannya. Gak usah bingung sis..yuukk kita buat gyudon (beef rice in the bowl) yg halalan toyyiban tentunya ^-^.

Bahan :
*200 gram daging sapi iris tipis
* 50 mlsoy sauce/ kecap jepang/kecap asin
* 1 sdm dashi
* 1sdmgula pasir
* 1 sdt jahe parut
* 1 sdt daun bawang,iris halus
* onsen no tamago
* 1 buah bawang bombay/onion
* air untuk merebus
Cara Membuat :
 1. Rebus air untuk merebus daging,setelah air mendidih, masukan daging yg sudah diiris tipis.Rebus kurleb 5 menit saja.angkat dan tiriskan
2. Masak soy sauce,dan gula,beri 3 sdm air. Masak hingga mendidih,lalu masukkan daging yg sudah direbus setengah matang tadi
3. Masukkan dashi,dan tambah airnya sebanyak 300 ml,masak hingga daging lunak
4. Masukkan jahe parut,aduk" lalu masukkan bawang bombay yg sudah diiris melintang,tutup dan masak kembali kurleb 20 mnt
5. Setelah semua tercampur, bawang bombay menjadi layu,dan harum,serta airnya menyusut,matikan api,lalu sajikan diatas nasi panas.Sajikan dengan onsen tamago apabila suka *tidak harus*, irisan daun bawang .

NikuJyaga

Uh!!I hate when i have done writing the post, and it come deleted by accidently!!
Well..here I started to have typing a post about NikuJyaga. Niku means meats in japanese. We didn't have this menu for about couple months. So I decided to make it for dinner. It served with miso siru and steamed rice.
Since most of japanese dishes come with sake, mirin and pork. Of course I have to make it in halal way as Iam a Muslim. And the taste has no much different anyway, you can change mirin to white or brown sugar. And it's quite hard to find big daikon (radish) here in KSA, I always got the small one.

Ojiya (japanese poridge)

Love Ojiya! especially for the weather like now * winter *
So, today I cooked Ojiya for lunch. And it was first ojiya for my daughter and she loves it alhamdulillah!
To make ojiya, you have to have kombu,and dashi for the basic soup broth. Or..when you finish to have nabe, you can keep the soup broth for ojiya. Here is the recipe :

Ingredients :
* 1 cup rice ( cooked )
* 5 cm kombu
* 1 pack dashi 
* 1 tsp soy sauce
* 1 whole lemon ( get the juice only )
* 1/2 of salmon fillet ( optional )
* 3 big shrimps ( optional )
* 2 of mushroom
* 1  sheet of chinese cabbage ( optional )
* 1/4 of tofu

* 2 eggs
* scallions ( slice thinly)
* water

Directions :
1. Leave the dried kombu in the water for about 10 min.
2. When it done, wash gently and boil with water, dashi and soy sauce..let it boil well for 3 min
3. Chop the salmon,squid and shrimp and put them in the soup..let it cook for about 10 minutes
4. When the salmon,squid and shrimp made good stocked then add tofu, and mushroom..taste it, you can add some salt if you want.
5. Stir gently until all are tender, put the rice already cooked, and stir again for about 5 minutes, make it like you make poridge ( make the water less than before )
6. Put the eggs in the small bowl, and shake it well
7. Pour it in the poridge  gently and stirl with  chopstick, so it's make more soft shape, and lemon juice
8. Turn off the fire, and put the chopped scallions and stir it back for 3 seconds and serve it in the bowl.

Tofu

I love tofu sooo much! especially when it served in the japanese dishes. 
Here, I wanna share the super duper easy raw tofu  recipe, check it out! ;

* 1 packed of silken tofu (soft)
* 3 cm of ginger
* 1 small packed bonito flakes
* scallions
* soy sauce
How to make ;
* Cut tofu in to square shape to be 4
* Grate the ginger with a grater, chop the scallions and put them in the small plate
* Serve the tofu in the plate or small dish, put scallion, ginger and bonito flakes on top
* Pour 1 tsp soy sauce each tofu and ready to eat
